I've actually eaten ostrich, it wasn't really like chicken. It was almost more like red meat in a weird way, really juicy. I had it at a chi chi poo poo restaurant and they put a big blop of foie gras on top of it, and it was sitting on top of some other kind of meat that was wrapped in pastry, and as I recall the whole thing was pleasant but odd.
If I try it again I think I'd like it in a McNuggets format, then I can really get a handle on what it's like. More in my life to compare it to.
When you say you always wanted to do "this," are you referring to riding an ostrich ... or been sat upon and probably choked as a form of bizarre torture? That sure doesn't look comfortable for the bird.
I've always wanted to ride an ostrich. I think the ostrich is a very strong bird & doesn't look like it's suffering to me. But hey, I'm no ornithologist. Let's ask the Ostrich Anti-defamation League president ;-)

The only thing better would be if an ostrich could fly. Imagine what a ride that would be.

That makes sense. Meat is muscle & ostriches don't have a chicken lifestyle, so they'd have different tasting meat.
