We once had a shoe spook a cat and it jumped that way. Not sure why, but it is funny for us to watch, not funny for them to go through.

Not much will scare our cats inside and I can't think of anything that does. We have an all black cat named Little Bear who had an accident with his tail so it is now about 5 inches long. I let him go out on occasion as he usually just walks down to the yard to eat some grass. Very often for no reason, something will spook him and his tail puffs up like a bottle brush. Kinda funny. I'll have to try the cucumber thing.
Kid: My cats are all jumpy but mostly at loud noises. Objects not so much. Little Bear's tail puffing up like a bottle brush is too funny.
That's a fun photo of the kitty and the pumpkin. I've seen those cucumber videos. We put out some cucumbers around our cats, they didn't phase them one bit. Now sometimes when there is a strange object on the floor they freak out (and we laugh) but I can see where it might be stressful to them.
Ida: I think it has more to do with something they didn't expect to see rather than assorted vegetables. Cats may be sneaky, but they don't like things sneaking up on them.
